A few years ago, during the time of the Cali Fair, I decided to embark on the exciting adventure of creating my own cantina. I had always been a lover of music, culture and good food, and the Cali Fair seemed like the perfect setting to bring my dream to life.
I started by researching the local market and analyzing the competition in the area. I wanted to offer something unique and different, something that would capture the essence of the fair and attract visitors. After much thought, I decided that my cantina would focus on salsa music and traditional Cali cuisine.
The next step was to find the ideal location. I wanted to be close to the epicenter of the fair, where people could enjoy the music and fun. After searching and negotiating, I finally found a perfect spot on a busy street, just steps from the main event area.
With the venue secured, I focused on the concept and menu. I wanted my cantina to be a welcoming and authentic place, where people could enjoy delicious typical dishes such as sancocho, empanadas and pandebonos, accompanied by refreshing fruit juices and, of course, a wide selection of salsa-inspired cocktails.
Obtaining the necessary licenses and permits was a long and bureaucratic process, but with patience and perseverance, I finally managed to comply with all the legal requirements to operate my cantina during the Cali Fair.
It was time for decoration and atmosphere. I wanted my canteen to reflect the joy and energy of the fair. I decorated the place with vibrant colors, murals of salsa dancers, and festive lights. Additionally, I hired a group of local musicians to play live during the nights, thus creating an atmosphere full of rhythm and flavor.
Opening day arrived and I was full of nerves and excitement. People began to arrive and soon my cantina was filled with laughter, dancing and the tempting aroma of food. Customers enjoyed traditional dishes and caught the festive spirit that reigned in the place.
As the days went by, my cantina became known at the Cali Fair. Customers returned again and again, bringing their friends and family with them. Word spread quickly and my canteen became a popular meeting point during the fair.
The experience of creating my own cantina at the Cali Fair was challenging but rewarding. Seeing how my dream became a reality and how people enjoyed the music, food and Cali culture was something really special. My cantina became an emblematic place of the fair, and every year I look forward to reopening its doors and sharing the joy of the Cali Fair with all those who visit us.
